Herb Roasted Potatoes Dijon

Cut in chunks:
6 medium red potatoes
Combine & toss into potatoes:
1/3 C. Dijon mustard
2 T. olive oil
1 clove garlic
½ t. Italian seasoning
Place in lightly greased baking pan or on shallow baking sheet.
Bake at 425 degrees for 35 to 40 minutes or until tender.
Serves 4
