Combine and set aside:
2 C. boiling water
2 C. 100% bran
Combine:
1 C. margarine
1 C. brown sugar
1 C. honey
4 eggs
1 quart buttermilk
5 C. whole wheat flour
1 T. salt
5 t. baking soda
4 C. bran flakes
1 ½ C. dates
1 C. nuts (optional)
Put in muffin tins.
Bake 350 degrees for 20 minutes
Makes 5 dozen.
Batter keeps in fridge for 30 days.
Variation: add cooked apples & cinnamon
