Grandma Packer's Spinach Salad and Dressing
Dressing:
1/3 c red wine vinegar
3/4 c oil
1/2 c sugar
3 or 4 green onions
3/4 tsp salt
3/4 T poppy seeds
1/3 t dry mustard
Salad
2 bunches romaine or spinach
2 cans mandarin oranges
1 pkg mushrooms
red onion rings
1 bottle bacon bits
candied almonds
1/3 c red wine vinegar
3/4 c oil
1/2 c sugar
3 or 4 green onions
3/4 tsp salt
3/4 T poppy seeds
1/3 t dry mustard
Salad
2 bunches romaine or spinach
2 cans mandarin oranges
1 pkg mushrooms
red onion rings
1 bottle bacon bits
candied almonds

Shannon's Signature Salad
Candied Pecans
1 C pecans
3 T butter
1/2 C sugar
1 T pepper
8 oz mixed baby greens
3/4 craisins
1/2 lb. feta cheese
Dressing
2 t. sugar
4 cloves of garlic
1 t. dried oregano
1/2 red onion cut up
1/4 t. each salt and pepper
1/2 C red wine vinegar
1 C parsley (1/2 bunch)
3/4 vegetable oil
Melt the butter in a pan. Add pecans and sautee over medium heat for about five minutes, being very careful not to let them burn. Meanwhile, mix the sugar and pepper in a bowl. Add pecans when they are done. Put all dressing ingredients in a blender and whirl until all are well integrated. Mix all salad ingredients and toss well with dressing.
Serves 8 as a side salad.

Sandy Griffith’s Greek Salad from Denise’s Wedding Reception
Combine:
2 C. cut up romaine lettuce
2 C. baby spinach
1 chopped cucumber
1 C. chopped zucchini
1 C. halved cherry tomatoes
½ C. halved Calamata olives
½ C. Pepperocini peppers
½ C. Chopped red onion
½ C. halved artichoke hearts
1 C. Feta cheese
1 can garbanzo beans, optional
12 oz. cooked cheese tortellini
Dressing, stir in right before serving:

Julie’s Blueberry Spinach Salad
Toss together:
1 lb. fresh spinach or Bibb lettuce
1 ½ C. fresh blueberries
4 Oz. crumbled blue (or feta) cheese
2/3 C. toasted pecans or walnuts
Dressing
Combine:
½ C. cvegetable oil
3 T. blueberry, white wine or raspberry vinegar
1 t. Dijon mustard
1 t. sugar
Salt to taste

Mom’s Frozen Easter Salad
Cream:
1 T. mayonnaise
3 oz. creamed cheese
4 T. strawberry juice
Fold in:
2 C. whipped cream
Add:
2 C. miniature marshmallows
2 pkg. frozen strawberries
1 can pineapple, drained
1 can fruit cocktail, drained
1 can mandarin oranges, drained
1 T. mayonnaise
3 oz. creamed cheese
4 T. strawberry juice
Fold in:
2 C. whipped cream
Add:
2 C. miniature marshmallows
2 pkg. frozen strawberries
1 can pineapple, drained
1 can fruit cocktail, drained
1 can mandarin oranges, drained
Diane Hoopes’ Frog Eye Salad
Cook 11 minutes, rinse with cold water; drain well:
1 1/3 C. ronzoni acini pepe uncooked
In large bowel, beat 2 minutes:
¼ C. pineapple juice
1 ¾ C. milk
¼ C. sugar
1 pkg. vanilla instant pudding
Gently stir in pasta and:
1 can 20 oz. pineapple chunks, drained
1 8 oz can crushed pineapple
2 cans mandarin orange segments
2 c. frozen non dairy whipped topping, thawed
3 C. miniature marshmallows
1/2 C. flaked coconut
Cover & refrigerate at least 5 hours.
