Suzanne Mosman’s Easy Frying Pan Chicken & Pasta

Cook in a frying pan:
4 chicken breasts, cut in pieces
Add & cook:
1 C. broccoli pieces
¾ C. mushrooms, sliced
1 medium zucchini, julienne
2 carrots cut in julienne strips
Mix together and stir into pan:
1 C. Parmesan cheese
1 pkg. buttermilk dressing
1 C. half and half
Toss in:
1 pound fresh pasta, cooked

Grandma Packer’s Old Fashioned Fried Chicken

Combine in a large bag:
1 C. flour
1 t. salt
½ t. pepper
Shake in bag until well coated:
1 cut up chicken or enough of your favorite chicken pieces to feed your group.
Heat in a frying pan at medium-high heat: 2-3 T. oil
Brown chicken pieces in hot oil.
Turn down heat to low and simmer chicken for one hour.
Remove chicken from pan and make gravy from the drippings.
To make gravy turn up heat on frying pan. Shake together and stir into the drippings:
1 C. milk
1/3 C. flour
Thicken gravy. Add water if needed.
Serve chicken with:
mashed potatoes, gravy and cooked corn or other vegetable.
