LA Times Pasadena Apple Nut Cake with Lemon Cheese Icing

Beat together:
2 C. sugar
½ C. oil
2 eggs
1 t. vanilla
Combine & add:
2 C. flour
2 t. soda
2 t. cinnamon
¾ t. salt
Add:
4 C. chopped apple
1 C. chopped nuts
Bake 325 degrees, 1 hour.
For Icing combine:
1 3 oz. pkg. creamed cheese
2 T. half and half
½ C. soft butter
4 C. powdered sugar
1 T. lemon juice
2 t. grated lemon peel
1 t. vanilla
dash salt
yellow food coloring
