In a glass bowl, Combine:
2 T. yeast
2 C. warm water
Set aside to prove for 5-10 minutes until it's bubbly.
Mix together: 1/3 C. sugar
1/3 C. butter (lightly softened)
Add in:
2 ½ t. salt
2/3 C. nonfat dry milk
1 egg
Add in yeast mixture and mix.
Add in gradually: 4 ½ C. flour
Knead, Cover and let rise for 45 min in a warm place, punch down.
Cut into pizza slices and roll into crescent shapes.
Place on greased tray.
Cover and let rise again for about 30 min.
Bake at 375 degrees for 15 minutes.
Take out when light brown.
Notes from Mom:
Water for yeast: If it's too hot, it will kill the yeast. If it's not hot enough, the yeast won't grow. Has to be hot to the hand. Yeast feeds on sugar, so mom always puts a spoonful of sugar in. Stir it into the dry yeast. Don't microwave, will be too hot.
Start over with the yeast if you don't get a good bubbly proof.
Add extra sugar and butter - maybe 1/2 C. each.
Soften the butter. If it's hot it will kill the yeast.
Adding flour: add 3 cups and see how it does. Gradually add until the dough starts to pull away from the sides. Switch mixing attachment for hook. Knead for a handful of minutes.
