Old Fashioned Oatmeal Cake from Lauren’s Birth Family Fun February 2002

Combine & set aside:
1 C. old fashioned oats
1 ¼ C. boiling water
Combine and mix well:
½ C. shortening
1 C. sugar
1 C. brown sugar
2 large eggs
Add:
1 ½ C. flour
1 t. baking soda
½ t. salt
1 t. cinnamon
¼ t. nutmeg
Add:
Oat mixture
Pour into greased and floured
9 x 13 cake pan
Bake 350 degrees 30 minutes
Meanwhile, combine in saucepan, bring to a boil until it reaches the softball stage (235 degrees):
½ C. melted butter
3 T. milk
1 ½ C. brown sugar
Remove from heat and stir in:
½ C. chopped walnuts or pecans.
Spoon warm icing onto warm cake and spread evenly over the top.
Place the cake under the broiler very briefly, just until the icing bubbles over the entire surface.
Cool
