Peel if skin is tough otherwise just rinse and dry:
4 medium even potatoes
Cut potatoes into thin slices but not all the way through. Use handle of a wooden spoon to prevent knife from cutting all the way through potato.
Place potatoes in microsafe dish.
Combine and sprinkle over potatoes:
3 T. melted butter
2-3 T. chopped fresh herbs such
As parsley, chives, thyme, sage, rosemary
Microwave at high power for 10 minutes.
Let rest 5 minutes.
Sprinkle with:
4 T. grated Cheddar cheese
1 1/2 T. Parmesan cheese
Microwave another 4 – 6 minutes on high power until cheese are melted and potatoes are soft.
Sprinkle with:
