Aunt Janet’s Minestrone Soup, that Grandma makes

Simmer covered 4-6 hours:
1 pound mild Italian sausage, browned
1 quart water
1 chopped onion
2-3 large carrots, sliced
2-3 stalks celery, chopped
4 C. (1 large can) tomatoes
2 C. tomato sauce
2 C. beef broth
1 T. parsley flakes
1 t. fresh or minced basil in a jar
1 t. leaf oregano
1 clove garlic
salt, pepper
Add:
1 can garbanzo beans
1 can green beans
1 C. broken spaghetti
Simmer 30 more minutes.
