Grilled Open Face Shrimp Sandwich

Rinse with cold water & set aside:
2 C. tiny pacific shrimp
Combine:
4 hard cooked egg yolks, mashed
¼ t. salt
1/8 t. pepper
¼ t. dry mustard
1 t. green onion, minced
Stir in:
1 raw egg yolk
¼ C. heavy cream
Add:
Shrimp
Hard cooked egg whites, chopped
Spread on:
8 bread slices.
Top with:
1 C. sharp cheddar cheese, grated
Paprika
Bake at 375 degrees for 10-12 minutes.
