Combine and mix well:
1 C. sugar
1 C. packed light brown sugar
1 C. butter-flavored shortening
2 large eggs
1 t. vanilla
Combine, add to first mixture and mix well:
1 ½ C. flour
1 t. baking soda
¾ t. salt
2 ½ C. oats
Add: 1 C. finely chopped hazelnuts (filberts)
1 C. white chocolate chips
Combine and add:
1 C. finely diced dried apricots
1 T. flour
Shape into 1½ inch balls.
Place 2 inches apart on cookie sheet and flatten slightly.
Bake 11-13 minutes at 350 degrees until, slightly moist in center and just beginning to brown around edges.
Let cool and then enjoy…
Makes about 3 dozen.
