Cook and spread in the bottom of a 9 x 13 casserole dish:
2 C. rice
Sauté in a frying pan in oil or butter:
1 onion
1 t. minced garlic
Add: 3-4 C. cubed chicken
Add & continue cooking:
1 pkg frozen or 2-3 C. fresh broccoli
Stir in:
2 cans cream of chicken soup
½ C. mayonnaise
1 t. lemon juice
½ t. curry powder
2 C. grated cheddar cheese
Spread over top of rice.
Bake for 30 minutes at 350 degrees.
Good with a fruit salad & homemade rolls. Glazed carrots would dress it up
for a party.
